Our Game Evening collaboration with the British Association for Shooting and Conservation last Wednesday and Thursday was an incredible experience for both our students and evening guests. Murray and Amy from BASC very kindly sourced the finest and freshest game from our region. Murray and Amy shared their vast knowledge and expertise with Our Level 1 and 2 students and were given a masterclass by in preparing game for a stunning 5 course menu in the evening. Beyond the health benefits, there’s another reason to appreciate game meat: sustainability. Wild game, hunted responsibly, supporting healthy wildlife populations and habitats. And because it’s locally sourced, game meat has a low carbon footprint compared to other meats. game meat is as much a part of conservation as it is of cuisine. Murray spoke after the collaboration, stating "The food the students and staff cooked was truly delicious and looked incredible. I would personally like to raise a glass to the students and staff for their dedication and hard work and to all the people who came out to enjoy the evening and try game meat". Murray and the college would like to give a huge thanks to Nottinghamshire’s own Thoresby estate for supplying us with the venison, pheasant also to Lincolnshire Game for supplying the woodpigeon and duck. This week’s treat was Level 3 Student Chefs revealing their research trip to Finland in 6 flavour packed courses. From barbequed mushrooms in a liquorice inspired sauce, braised venison rather than reindeer, crawfish and pickles, soft celeriac in a sweet pool of soup, a stunning bright turquoise blueberry dessert with a mirror finish and a take on the Finnish speciality Easter egg – solid, but soft chocolate, served in a real egg shell and box! WOW who knew the Finnish knew flavours and having fun with food. All that for under £30.

Near Perfect Piedmont

Having just returned from nearly a month inter-railing in Italy I was really looking forward to this themed Northern Italian evening and it did not disappoint, at least in food terms, geography is perhaps another matter. Piedmont is NOT on the coast so the delicious first course of fritto misto was not really very authentic but so scrumptious all the same. The next course Bollito misto with salsa verde was truly EXCELLENT although (unusually) the portion size was rather too much for me. The next two savoury courses - a Tagliatelle with fresh truffles followed by a duck confit risotto cooked in Barolo wine were OUTSTANDING, especially the slivers of confit duck skin used as a garnish. The dessert course was also good, a chocolate mouse accompanied by a macaron and toasted almond soil - delightful! Again geography let them down somewhat with the wine list - the Puglian Primitivo is sourced hundreds of miles away from Piedmont but the lack of authenticity was worth it. A noble wine at a bargain price! Thank you Fletchers. I’m being very picky in my review today so I need to stress that this was a terrific meal and at £29 for 5 staggeringly good courses - an absolute steal. Why don’t more Nottingham residents explore this wonderful restaurant?

We decided to try Fletchers at the college for lunch and were very pleasantly surprised. The food was good quality served beautifully and service excellent in spite of the nerves. Wine a little pricey for the venue, but didn’t detract from an otherwise excellent lunch!
